I have made this quiche for 6 years now for every type of celebration possible! I don't believe in fat-free ingredients, so use full fat cheese and evaporated milk. I've always used high quality ham instead of turkey-ham. My standard side dish is a pan of roasted asparagus. I've passed this recipe on to others at least 25times. ITS PERFECTION!

I've made it the night before, but I baked it. Then just warmed it up at 350 for 20 minutes or so. It was really good!

This was a great quiche, full of flavor. i did make some substutions as it was what was on hand. Instead of ham, I used crumbled bear (yes, bear) breakfast sausage; cheeses were a light shredded Mexican Blend and light Italian Blend. My 16-year-old loved it as well as a picky husband. also, I couldn't find fat-free evaporated milk so I used 2 percent.

Yep, a good solid recipe. Used one piece of bacon instead of turkey and thought that was plenty of meat. Added some red bell pepper and a sprinkle of Italian seasoning. And like some other cooks, I pureed the cottage cheese. It was certainly good and came out of the pan very nicely, but it was not particularly special--just good. A nice dish for a potluck or to use as an appetizer.

I made this recipe for a good friend who came over for brunch. It was so delicious between her, my husband and I, we ate most of it! I truly did not miss the crust at all. Needless to say, I made this recipe again later that day for breakfast during the week and since then my husband often requests this recipe. My only tweak so far after making the initial recipe is to add another handful of spinach.

It turned out so great! And is equally good hot and cold. The cheese makes a nice crust at the bottom, and you can use mushroom, green onions, bacon, whatever you have at hand.

This was a pretty difficult recipe to work with. There are only two of us; don't mind having leftovers, but even halving the recipe wasn't easy. Ended up halving everything but the spinach and the eggs. Bumped the spinach to 1 1/2 cups and used three whole eggs. Did use smoked ham and ran the milk and cottage cheese through the blender as suggested by another reviewer. Prepared this way made three generous servings. DH, who doesn't particularly like quiche, actually liked this dish better than I. The next time he suggested topping with a spiced tomato sauce. I will be making this again, but with the sauce.

I've made this recipe several times, swapping in more veggies or different types of cheese depending on what's in the fridge, and it always always always turns out to be delicious. Everyone I have served this dish to has loved it. I actually never have evaporated milk on hand, so I usually just use a little less regular or soy milk and I've never had a problem with the recipe.

I pulled this one out of the archives this week. I'd written a liitle note, saying, "good." Tonight I added a second note, "super good again." A keeper for sure. This time I started cooking later than usual so we had leftovers and had it re-heated a few days later. Ialso added some diced orange bell pepper I wanted to use up. Excellent with salad and some summer fruit.

Love, love, love this recipe!! I am not a fan of crust so I was more than happy to use cheese instead of dough for the crust. Great for a fast breakfast or for dinner with a salad or vegetables on the side.

Very delicious quiche. My husband and I loved it. It was so easy and we like the lower calorie ingredients. YUM! Will make again for sure. I didn't change a thing in the ingredients other than I used a slab of smoked turkey and cut it into cubes. I couldn't find the Jenny-0 brand of turkey in my grocery store.

This was excellent! Made it for a brunch for four of us and there were no leftovers! The only change I made was I added a clove of minced garlic to the diced onion and turkey-ham. 45 minutes baking time was perfect. This is such a versatile recipe since I think you could add whatever ingredients you like. Maybe some hot turkey sausage and asparagus, or cubed ham and broccoli, etc. Will definitely make again!

I made this for Mother's Day and it was a hit! I used cubed ham instead of the turkey, which was tasty. The main change that I made was I made mini-quiches placing the mixture into a muffin pan (unlined with non-stick spray is key) and I got 9 mini-quiches out of it. The flour and baking powder amount scared me, thinking the quiche would taste like flour, but the quiches couldn't have been better. I placed a 1/4" slice of plum tomato on top of each with some shredded swiss and they looked so professional. Will make again and easy to add other veggies and meats next time.

My husband cooked this for our dinner last night and it was outstanding. The only ingredient substitution was that I couldn't find cubed smoked turkey ham, so I used regular deli smoked turkey instead, and we had to cook it about 10 minutes extra for it to be done all the way. It would be great for a brunch!

I made this recipe because I had spinach that I needed to use up before it went to waste. I am not a huge fan of ham or cheese, but made the recipe as written. I wasn't going to comment, because honestly I didn't think it was that great. But this morning, I had a bite of the leftovers and was won over. It tasted so much better than yesterday - can't figure that one out. I do have all the ingredients to make one more, so this time I think I will skip the ham and replace it with bacon and add some diced green chilies and pepperflakes. Spicing it up will make it a keeper for me. Enjoy

I have made this numerous times, and every single person has asked for the recipe. I altered it a little bit using Canadian bacon instead of the turkey and 1/4 c half and half plus 1/4 c skim milk instead of evaporated milk since I always have those on hand. When I make ahead, I slightly undercook it so when it's reheated, it doesn't dry out. Great as a frozen dish for a new mom, brunch and even dinner with a side of salad greens.

I just mixed everything together, did not layer. Used 1/2 cup cottage cheese, that's all I had and small can evaporated milk, 5 1/2 oz.Came out great, looked beautiful and tasted even better after reheating. May try mini quiches in muffin tins next time. Also just used ham.

Good solid recipe, but I expected more given the all the 5 star reviews. My 5-year old likes very BLAND food (ie. white rice) and she LOVED it. The rest of us thought it was missing something. I would make this again, but I would seek more flavor by adding salt, more pepper, more vegetables, white wine, or maybe a more flavorful cheese.

Absolutely amazing! I made some changes - Added garlic and extra pepper to the turkey onion saute. Used smoked gouda and low fat smoked provolone, fat free half / half, and low fat breakstone cc. Also used smoked turkey breast (Boars). Added a dash of nutmeg to egg / spinach mixture. This was an amazingly rich recipe. IMO, 8 servings too small, try 4 - 6 servings as a meal. Served with salad.

I make something very similar but I put the cottage cheese and milk in a food processor or blender first and blend until smooth. This makes the end result more custard-like, just like a traditional quiche and no one knows there is cottage cheese in there.

This could not have been any easier. I did not deviate from the recipe at all. Really delicious. As a dinner portion, 1/8 not really enough, but calorie count is so low, a double portion still let me stay within the fat and calories I allow for this meal. I will make this again.

I made the recipe exactly as specified and loved it. I went ahead and made two and froze one to save for after church lunch or when we have someone over. Flavor is mild but enjoyable. The only thing is everyone ate two slices. This really only feeds 4.

I literally eat this for lunch all the time! All my friends have asked for the recipe and love it as well! It's delicious! Couple tips...all the ingredients you need make 2 quiches and they freeze great! I add a whole onion and extra spinach! The Jenni-O turkey ham was found in my local Kroger with the traditional ham products and I use one quarter for each quiche!

Outstanding recipe! This quiche was easy to prepare and tastes delicious! I really like that this quiche doesn't have a crust yet the bottom gets ever so slightly crisp. I substituted turkey ham for low sodium turkey breast thick sliced from the deli counter (almost 1/2 lb which was way more than needed) and added fresh mushrooms. I served the quiche with CL's raspberry cream cheese muffins (but made with blueberries) and fresh fruit for a filling but light lunch. This is a great recipe that I will definitely make again!

I love this recipe. It is quick, easy, delicious, adaptable, my husband likes it, my toddler likes it, etc! Tonight I didn't have spinach, but I had beet greens. They substitute just fine for the spinach. I also added a few more veggies because I had them. Just throw the extra veggies into the saute pan with the onions and ham. Truly a great recipe. The other tip is that I always double it. I want to try freezing one, but it is good we never get that far.

I substituted turkey smoked sausage for the turkey ham and cut out the entire suateeing first step. We really enjoyed the blend of flavors. We had it for mother's day brunch. I doubled the recipes and plenty of leftover for breakfast this week

I love this recipe! Didn't have cottage cheese, so I successfully used yogurt cheese (plain yogurt, drained in a coffee filter to reduce moisture). No curds this way. I used leftover regular ham. I will make this many times!

This was wonderful. I love quiche but not the crust, so this was perfect for me. It didn't taste light at all - the texture wasn't quite the same as you'd get with a full fat quiche, but the flavor was amazingly rich. The browned-cheese bottom layer is what really made this dish something special. I used a half-and half mixture of cheddar and swiss cheeses, and I upped the spinach a little bit. Otherwise, I made exactly as directed. I made it in a non-stick pie pan, which worked great. The dark finish made the bottom of the quiche nice and brown, and I didn't have any problem with sticking - I just dumped the quiche out onto a plate and served it that way.

My husband and I love this dish! I throw in tons of veggies that I need to use up (broccoli, asparagus, tomatoes, etc.) and I think it adds a little something to the dish. I used ham and we thought it was great. It's so easy to make and this will definitely be in our regular rotation!
