My Apple Watch paused the new update and said it will resume when I get connected to a wifi

Hi misleidy272,
It's important to make sure that your iPhone is connected to Wi-Fi, and that you keep your iPhone near your Apple Watch throughout the entire update. It could take awhile for the update to complete, so you might want to update overnight or wait until you have time.
Connect to Wi-Fi on your iPhone, iPad, or iPod touch - Apple Support
If you have a strong Wi-Fi connection, and the update has not resumed, the “Need more help with updating?” section of Update your Apple Watch has excellent additional troubleshooting steps you can try.
Need more help with updating?
Try these steps:
1. Make sure that your Apple Watch is connecting properly to its charger.
2. Restart your Apple Watch.
3. Restart your paired iPhone.
4. Try again to update your Apple Watch.
If the update won't start:
1. Open the Apple Watch app on your iPhone.
2. Tap General > Software Update.
3. Delete the update file.
4. Try again to update your Apple Watch.
